Peaches with Basil, Pistachios and Burrata
Ingredients (Serves 2–4):
2 ripe peaches, sliced
1 ball of burrata cheese (about 4 oz)
1/4 cup shelled salted pistachios, roughly chopped or crushed
1 handful fresh basil leaves
Extra virgin olive oil, to drizzle
Sea salt and fresh cracked black pepper, to taste

Prep the Ingredients:
Wash and slice the peaches into wedges. Tear the burrata gently into halves or quarters. Roughly chop the pistachios and fresh basil.Assemble the dish:
Layer the peach slices and nestle the burrata pieces on top and in between.Add Toppings:
Sprinkle the chopped pistachios and basil over the top. Drizzle with olive oil and balsamic glaze. Add a light drizzle of honey for extra sweetness, if desired.Season and Serve:
Finish with a pinch of sea salt and a few grinds of black pepper. Serve immediately with crusty bread or as a refreshing side dish.
Tip: For extra flavor, lightly toast the pistachios in a dry pan for 2–3 minutes until fragrant.
