Peaches with Basil, Pistachios and Burrata

Ingredients (Serves 2–4):

  • 2 ripe peaches, sliced

  • 1 ball of burrata cheese (about 4 oz)

  • 1/4 cup shelled salted pistachios, roughly chopped or crushed

  • 1 handful fresh basil leaves

  • Extra virgin olive oil, to drizzle

  • Sea salt and fresh cracked black pepper, to taste

Instructions:

  1. Prep the Ingredients:
    Wash and slice the peaches into wedges. Tear the burrata gently into halves or quarters. Roughly chop the pistachios and fresh basil.

  2. Assemble the dish:
    Layer the peach slices and nestle the burrata pieces on top and in between.

  3. Add Toppings:
    Sprinkle the chopped pistachios and basil over the top. Drizzle with olive oil and balsamic glaze. Add a light drizzle of honey for extra sweetness, if desired.

  4. Season and Serve:
    Finish with a pinch of sea salt and a few grinds of black pepper. Serve immediately with crusty bread or as a refreshing side dish.

Tip: For extra flavor, lightly toast the pistachios in a dry pan for 2–3 minutes until fragrant.
